The plant-based mushroom seitan is cooked in a fragrant bongkot sauce—made from Balinese torch ginger flower, giving it a citrusy, aromatic depth. This is where the richness of the dish really begins to shine.


We pair it with sweet tempe, bringing that familiar caramelized texture and nutty sweetness, and mixed vegetable urap, a warm salad tossed in shredded coconut and herbs, offering freshness and crunch.


A Dish Built on Texture and Heat

For contrast and satisfaction, the dish includes a boiled egg with balado sambal, a spicy tomato-based chili that brings just the right amount of heat to round things out.

And yes—if you’re fully plant-based, you can request the vegan version, where the egg is simply omitted without sacrificing the dish’s richness or balance.
